how to crack a protocol???

on our site we have a number of PLCs in order to improve the plants performance the introduction of a "supervisory or master computer" (scada) would be ideal.
BUT It seems that these units are outdated (we only purchased the last 2, 3 years ago) and nobody knows much about them.(or wants to know) I can program them and monitor specific values thru a laptop or the specialised programer. The laptop gives me a RS232 interface to the units.
Is there a software package or a simple way to "trap " the data transfer. this would give me a look at the protocol and maybe we can generate the drivers from this.
PS the PLCs are Mitsubishi AOJ2-H units and the programing /monitoring software is Mitsubishi's MEDOC
It would be really great to beat this and any ideas suggestions very gratefully received.

capturing is easy, tomake sense of the captured data you need imagination and some ingenuity.
